My First Healthy Vegan Fridays!




I’m so honored that my friend Kimmy from Rock my Vegan Socks has asked me to co-host Healthy Vegan Fridays with her! She’s been doing an amazing job sharing the veg love around the blogosphere. I’ve been taking part in HVF for over a year and have loved finding new recipes to try and meeting other veg-friendly bloggers.

Never heard of Healthy Vegan Fridays before? It’s an amazing weekly linkup for bloggers to share their delicious and healthy vegan food. This linkup is not restricted to recipes though – feel free to share your posts on exercise & fitness, plant-based health & wellness,  and/or vegan travel, restaurant and cookbook reviews.

Don’t have a blog? Don’t worry! You can come and see what others have shared and find some tasty food to try!

Vegetable sticks in glass mason jars

Veggie Quest shared her Easy Party Veggie Cups. I think they would be great for parties. I love how the dip is already in the bottom and guests don’t have to keep the food balanced on a plate. That way they aren’t getting their hands all messy and then wiping the dip on your couch lol.


The Green Gourmet Giraffe shared her easy Lo Mein Veggie Noodles. These look delicious and I love the little Hello Kitty and pretty chop sticks!



Courtney’s Cookbook shared her Roasted Ranch Chickpeas. I used to be obsessed with anything ranch before going vegan so I’m definitely going to give these a try!

This week I’m sharing my Quick Curry Noodles with broccoli and toasted cashews. I made curry noodles instead of one of my full curries in case some people were hesitant about trying new flavors but the curry flavors are still there (see my post for the whole story).



And Kimmy is sharing her Cold Almond Butter Noodle Bowl. How awesome does that look? Totally making this for my next bbq or potluck!

  1. What a great idea! I wonder what determines what is healthy, though, lol. I think I will just enjoy everyone else’s delicious looking recipes! The roasted chickpeas look pretty awesome, but everything does. I’m so glad that there are so many great vegan cooks out there 🙂

    1. Thanks Margaret! We basically accept anything vegan bc it’s kind of easy to spin a healthy twist on most things. Like I can convince myself Ben and Jerry’s vegan I’ve cream is healthy bc it has almond milk lol. If you ever have anything to add, we’d love for you to share. We accept product and restaurant reviews, health and wellness info, basically anything vegan or health related!
