Healthy Vegan Fridays #140

 Happy Friday everyone!

I hope your week was amazing! Nothing too big going on here. I’m feeling ready to commit more to working out. I now have a trainer at the gym and have started running again. You may have seen this picture on my Instagram page. To motivate me more for my workouts I wear fun tees and thought I’d start sharing them – probably only once a week since I’m not really into selfies but I do pride myself of my t-shirts. 🙂

I’m also volunteered at and am attending my first healthcare conference so that’s been exciting. I’m learning so much.

Any plans for the weekend for you?

Healthy Vegan Fridays is an amazing weekly linkup for bloggers to share their delicious and healthy vegan food. This linkup is not restricted to recipes, though – feel free to share your posts on exercise & fitness, plant-based health & wellness,  and/or vegan travel, restaurant and cookbook reviews.

Don’t have a blog? Don’t worry! You can come and see what others have shared and find some tasty food to try!

Here are a few of our favorite recipes from last week!

sleepy men chocolates for kids insomnia
I’m obsessed with Beautifully Bohemian’s Sleepy Time Chocolates. How sweet is it that she made these for her kids? I wish my mom made these for me when I couldn’t sleep when I was younger (or even now!).  I love that Randi uses natural ingredients too.

{Healthy, Vegan, Gluten-Free} This cinnamon raisin peanut butter is an easy, homemade version of a favorite kitchen staple-- with a little bit of fanciness thrown in!
Courtney’s Cookbook’s Cinnamon Raisin Peanut Butter looks perfect to spread on bread, add to smoothies and smoothie bowls or to eat right out of the jar (which is probably what I’m going to do with it). Love the flavor combination because it’s like I can have my cinnamon raisin bread without the bread!

Chocolate Coverered Strawberry and Cashew Butter Baked Protein Oatmeal [Clean, Vegan, GF]
This Chocolate Covered Strawberry and Cashew Butter Baked Protein Oatmeal from And a Dash of Cinnamon looks like my kind of breakfast. She always comes up with such protein-packed and tasty dishes!

This Tomato Chickpea Salad with Cilantro Lime from A Virtual Vegan looks so fresh and colorful. I’m going to have to make a big batch and bring it to work this week!

Today Kimmy is sharing her Chickin Sinquesadillas. Don’t they look delicious? I need to get to the grocery store and pick up some tortillas so I can make these for dinner this weekend!

And I’m sharing my Lentil Bolognese With Spaghetti Squash. It’s a hearty dish because of the lentils but I made things a bit lighter with the spaghetti squash. If you’re not into spaghetti squash, you can use any kind of pasta (I’ve had it both ways and enjoyed it).

  1. So much delicousness! And that shirt is awesome. Where do you find them? My recipes are cheesy, yogurt laced this week again BUT I love your linkup and stlll have to stop by. I’ve got your bolongnese on my list to try!

  2. Aw thanks so much for sharing my sleepy-time men!!! I’m serious, once you start making them YOU CAN’T STOP lol. And I know I said this on IG, but I must have your shirt- hope you are enjoying yourself at the conference too! Have a great weekend!

  3. Good morning Mary Ellen!
That t-shirt is so cute! Love it. Having a trainer really helps with my motivation. I find the price a little off putting, but it’s totally worth it.
I hope you have a great time at the conference this weekend! So excited to try your bolognese this weekend =)

I'd love to hear from you!
