Happy Friday everyone!
How has your week been? Mine’s been good. Trying to get a lot of blog stuff done before school starts up again this weekend and I’m swamped again. I’ve been spending lots of quality time with my pups this week too. I hate leaving them for the weekend when I have school. I mean, how could you not miss this little guy?
I also wanted to tell you about a new post I did on Vegan Meal Planning. I’ve been working on it for a while and I’m so excited to be able to share it. I included some downloadable materials that I think will help those starting to meal plan like my Vegan Kitchen Staples List as well as a Meal Planner & Shopping List (both of which are writeable PDFs so you can type in them). Check it out if you’re interested in meal planning or know someone that it might help (like new vegans or those new to meal planning).

This Wild Rice & Vegetable Soup from Alison’s Allspice looks so comforting. Perfect for chilly weather and when you want healthy!
I’m so excited to try Katering for Veggies’s Tahini Roasted Squash. Such a simple switch from oil to tahini but I’m sure it makes for a deliciously creamy squash! Yummy!
Fueled by Carrots’s Soba Noodles with Kimchi and Edamame would be the perfect tasty lunch for me to take to work. I really love Kimchi (especially the spicy kind) and as Vicki says, it’s a fermented food which helps the good bacteria in your gut – it’s a win-win!
These Pecan Pie Squares from Bite Size Thought’s look sooo good! The pecans, fruit and spices sound like the perfect mix of deliciousness!
Kimmy is sharing her Tofu Scramble this week. Um, I could eat this every morning! Love how she used artichoke hearts and sun-dried tomatoes – I don’t see that added in most tofu scrambles.
And I’m sharing my Vegan Banana Nut Muffins today. They’re dense muffins full of protein (I even added beans but don’t let that stop you from trying them!). I have been having them for breakfast and they keep me full for hours. 🙂
