I’m off today, yay! I’ll be spending quality time with Matt, Firenze, and Sophie this weekend along with doing some homework and maybe (hopefully) making a video for the blog. Then I’ll be spending Easter with my family. I have a few ideas on what I’m making (definitely my colcannon soup) but not sure still about the main dish. So excited to get a little time off to just relax.
Oh and if you need my pups, they’ll be doing this as usual:
I cannot even tell you how many blankies and pillows we have on our couch. It makes me and the pups cozy and I finally got Matt into liking it as well. 🙂

This tasty looking Black Rainbow Chard Chili Beans from Allotment 2 Kitchen is my kind of meal – warming and yummy. And the rainbow chard is from Shaheen’s garden, and as I told her already, I’m jealous!
This Cauliflower Lentil Loaf from Green Gourmet Giraffe would be the perfect main dish for Easter this weekend (if you celebrate). Cashews and lentils give this a nice serving of protein too. Yum!
And a Dash of Cinnamon always has such great protein baked goodies like these Flourless coconut protein muffins. I love how they’re also gluten free too, plus I’m into anything coconut especially once the weather starts getting nicer.
Fueled by Carrots shared her Vegan Curry Shepard’s Pie. This is such a cool mix of Indian flavors meeting an Irish dish. Excited to give it a try!
Speaking of shepherd’s pie, check out Kimmy’s version of Shepherd’s Pie as well! While she made this for St. Patrick’s day, any day would end well if you had a big helping of this on the table. Totally need to try this too!
And finally today I’m sharing my Carrot Cake Cupcakes. I think these would be a cute treat for Easter or if you don’t celebrate, for spring in general because who doesn’t love a cute bunny? I also made a really easy One Pot Lemon Pasta for the blog this wee so if you’re in need of a quick meal, check it out!
