Healthy Vegan Fridays #148


** Special HVF Update **

It is with heavy hearts that Kimmy and I announce that next Friday, April 28th will be our very last Healthy Vegan Friday. We have loved so very much hosting these weekly potluck parties, especially getting to know all of you. We really feel like we have a little family that has grown over time. Many of you have been with HVF from the start and have supported us and we cannot tell you how much we appreciate this. And some of you are newer and we love that you have found us and shared with us.

With a full-time job, school, and blogging, things have been extra busy for me lately and Kimmy has started on a new path with her full-time job as well. While we have loved HVF, with so many other commitments, we think it’s time to let HVF go.

We will both continue to blog and hope to continue our relationships with you. Thank you so much for everything!

I’ve been to Blossom and have tried this pie and let me tell you, it’s amazing. How pretty are Amy’s pictures too? Definitely, go on over to her site and check out the recipe!


Vegan Easy Black Beans and Rice recipe - with Cilantro Lime Brown Rice / Running in a Skirt

Running in a Skirt’s Easy Black Beans and Rice look so delicious! And a bonus is they are easy to make! This looks like a perfect side dish to all of your Cinco de Mayo dishes!

How yummy do Sprinkle of Vanilla Sugar’s Easy Vegan French Pâtisserie Fruit Tarts look? I always am sad walking around a regular pastry shop knowing I can’t have their fruit tarts…now I can make them myself! The tart crust is always my favorite part and this one looks so good.


Vegan, Wholemeal Hot Cross buns

Masala Vegan’s Vegan Hot Cross Buns are another tasty treat I’m happy to see. I haven’t had hot cross buns in years (my mom used to get them for Easter). So excited I can start having these again!


Kimmy is sharing her Rhubarb Lentil Soup. I told Kimmy I was scared to try it because I heard rhubarb is poisonous. She put my fears to rest by reminding me it’s just the leaves that are poisonous (don’t eat those!). Now I’m VERY happy to be able to try her soup. It looks like comfort in a bowl, which I desperately need right now.


And today I’m sharing my  Lemon Blueberry Overnight Oats – dessert for breakfast!

  1. Oh no! But I guess it is a matter of being grateful for all that you have contributed to keep the event going rather than wallowing in what I will be missing. It has been a great event and it has been great to get to know your blog through the event – will look forward to seeing your blogging continue.
