This Vegan Lemon Chicken Sandwich is so easy to make yet extremely flavorful. Vegan chicken strips are a quick way to get a meat-free meal on the table fast while the Sabra Spread adds that extra savory component.

I get pumped when a new veggie-friendly product comes out, so when I was contacted about trying out and creating a recipe for Sabra Spreads, I was really excited. Since I already eat Sabra hummus weekly, I figured I’d like the new spreads as well – and I was right! They taste delicious and I love that they use non-GMO ingredients. The spreads are located in the refrigerated section so you know they’re fresh (unlike some other products that sit on the shelves for months).
I love the taste of lemon and herbs together so I knew I wanted to do a play on those flavors. I also wanted something quick and easy for people to get on the table fast. My first thought was tofu but after trying that a few ways I wasn’t satisfied. Then it hit me – vegan lemon chicken! I haven’t made a lemon chicken substitute since going veg (what!?) so this was the perfect time to do it.
My vegan lemon chicken sandwich is soooo easy to make. If you’re having a busy week and need a quick meal to make fast, this is the way to go! Just saute the vegan chicken with spices and lemon, slice up some bread and veggies, spread on the Sabra and you’re good to go in about 15 minutes!
A few other things I really liked about these Sabra Spreads is that they were easy to use. They come in a squeeze bottle which always is more convenient for me. I’m also getting my husband to use these as they’re healthier and contain 75% less fat than mayo. And as I said 2 flavors are fully vegan and the 3rd contains honey (but no dairy or eggs!).

Serves Serves 2
- 1-2 TB olive oil
- 10 oz frozen vegan chick'n strips (I've used Morningstar Farms & Gardein)
- veggie broth or water (if necessary)
- Juice of 1 lemon
- 1 TB garlic powder
- 1/2 tsp sea salt
- 1/2 tsp pepper
- 2 rolls of choice
- 2-3 romaine lettuce leaves, chopped
- 1/4 onion, sliced
- tomato, sliced
- 2-4 TB Sabra Garlic & Herb Spread
- Heat oil in large pan and add chick'n strips.
- Cook for about 5 minutes or until heated through. If there is not enough oil add a few TB of veggie broth or water.
- Once fully cooked, add lemon juice, garlic, salt, and pepper and stir for a 2 minutes.
- Add lettuce, onion, tomato and Sabra spread to roll and top with cooked chick'n.
