This bright and colorful Spiralized Thai Salad with tasty peanut dressing adds fun and flavor to dinnertime. It’s easy to make and a great way to add in more veggies to your day!
Salads can be the perfect meal in the warmer weather when you don’t feel like cooking in a hot kitchen. But let’s be honest, sometimes the same old salad can get boring.
I wanted to make a fun take on salad to switch things up a bit and show you that all salads don’t have to be blah. So because I’ve gotten such great feedback on my Zucchini Pasta Alfredo, I thought I’d do a zucchini noodle type salad which turned into my Spiralized Thai salad.
Spiralizing Veggies
Spiralizing is so fun and seems to make my plate “happy”.
My favorite veggie to spiralize is zucchini noodles (aka zoodles). If you’ve never made zoodles, check out my how to make zucchini noodles post for instructions.
To spiralize, you take spiralizer (I use this one that is not too expensive), fit the veggie in between the blade and the handle, and then turn. That’s about it! Easy veggie noodles in no time!
Spiralized Thai Salad with Peanut Dressing
Asian cuisines are some of my favorite food. I’m always coming up with recipes that remind me of Asian dishes like my Thai Basil Noodles, Teriyaki Tempeh, and Mongolian Soy Curls.
This Spiralized Thai Salad has two of my favorite Thai flavors – peanut and cilantro. If you’re thinking you’ll skip out on the cilantro, please don’t! It really does make the salad that much tastier.
The creamy peanut dressing has hints of lime and a tiny bit of heat thanks to some sriracha.

Spiral Thai Slaw Salad {vegan & gluten free}
Ingredients
- 2 zucchinis
- 1 large carrot
- 1/2 red pepper
- 1/4 red cabbage
- 1/4 C slivered almonds
- 2 TB fresh cilantro , chopped
Peanut Dressing
- 2 TB creamy peanut butter
- 3 TB water or veggie broth (more if needed)
- 1 TB tamari (or soy sauce if not gf)
- .5 tsp maple syrup
- .5 tsp garlic powder
- .5 tsp onion powder
- 1 TB rice wine vinegar
- 1 TB fresh lime juice
- few drops sriracha (optional but totally adds flavor)
Instructions
- Spiralize zucchini and carrots.
- Julienne/chop pepper and cabbage.
- Add all sauce ingredients to small bowl and whisk.
- Add vegetables to a large bowl and with drizzle dressing.
- Top with almonds and cilantro.
