Mediterranean Quinoa Salad

Take a trip to a Mediterranean beachside cafe with this Mediterranean Quinoa Salad. Quinoa and veggies are topped with tasty vegan feta for a bold and delicious salad.

  • 2 cups cooked quinoa
  • 1 large cucumber, chopped
  • 1 large tomato, chopped
  • 1/4 cup onion, chopped
  • 2-3 TBs cilantro, chopped
  • 1 cup tofu feta

For the Lime Dressing


  • Add all ingredients for salad in a bowl (except for the tofu feta) and mix gently.
  • Mix dressing ingredients in separate bowl and add to salad.
  • Top with tofu feta and enjoy!
